Apricot Coconut Oatmeal Cookies | Commercial Dehydrators

These Oatmeal Apricot Coconut Cookies are just the thing to curb your sweet cravings. Made with hearty oats and sweet, chewy dried apricots, these sweet treats are sure to please!

Ingredients
  • 2 cups oat groats (or rolled oats)
  • 2 cups of dried apricots
  • 1 cup shredded coconut, unsweetened
  • 1/2 cup grated fresh apple (2 medium-size apples)
  • 1/2 cup pitted dates, chopped coarsely
  • 4 tbsp coconut oil
  • 2 tbsp coconut nectar (or pure maple syrup)
  • 1 tsp natural vanilla extract
  • 1 tsp grated lemon zest
  • Pinch of sea salt

Instructions
  1. Add all ingredients into a food processor; fix in the blade; pulse to combine well.
  2. Pour the blended mixture into a large bowl; use your hands to work on mixture and mold into balls. Add additional flavors to taste. Add extra sweetener or lemon zest if desired.
  3. Mold dough into medium-sized cookies; place on dehydrator sheets. Place in a dehydrator and dry cookies at 100°F (38°C) for 12 to 15 hours or until desired cookie state is achieved.
