Ingredients
- 2 cups oat groats (or rolled oats)
- 2 cups of dried apricots
- 1 cup shredded coconut, unsweetened
- 1/2 cup grated fresh apple (2 medium-size apples)
- 1/2 cup pitted dates, chopped coarsely
- 4 tbsp coconut oil
- 2 tbsp coconut nectar (or pure maple syrup)
- 1 tsp natural vanilla extract
- 1 tsp grated lemon zest
- Pinch of sea salt

Instructions
- Add all ingredients into a food processor; fix in the blade; pulse to combine well.
- Pour the blended mixture into a large bowl; use your hands to work on mixture and mold into balls. Add additional flavors to taste. Add extra sweetener or lemon zest if desired.
- Mold dough into medium-sized cookies; place on dehydrator sheets. Place in a dehydrator and dry cookies at 100°F (38°C) for 12 to 15 hours or until desired cookie state is achieved.
