Coconut Butter Macaroons | Commercial Dehydrators

These treats have an intense coconut flavor from the coconut butter and shredded coconut. Choose finely shredded coconut rather than the coarser variety for these macaroons. Make sure to top with Himalayan salt, which has a beautiful pink color and a pleasant texture.

Ingredients
  • 3 cups shredded coconut
  • 3/4 cup maple syrup
  • 1 1/2tsp. vanilla extract
  • 1/2cup cashew flour
  • 2 cups finely shredded coconut
  • 1/4 tsp. Himalayan salt

Instructions
  1. Process  3  cups  shredded  coconut  in  the  food  processor until creamy.
  2. Mix  coconut  butter,  maple  syrup,  vanilla  extract,  cashew flour and 2 cups finely shredded coconut in a bowl.
  3. Using  a  scooper,  scoop a Tbsp  onto  dehydrator  sheet. Sprinkle with salt.
  4. Dehydrate for 24-30 hours at 110°F (43°C).
